I opened Driftwood because I got tired of explaining to guests why their winter tomatoes tasted like nothing. Growing up, my family ate what the season gave us—that's not nostalgia, that's just how food actually works. When I built this kitchen on South Congress, I called every farm within a 150-mile radius and asked them the same question: what do you have right now? That conversation became our menu. Some weeks we're heavy on greens and stone fruit. Other weeks it's root vegetables and game. Our team refreshes the menu weekly, sometimes twice, because that's what respect for ingredients looks like. Thomas B. said it perfectly: "The menu changes but the quality never does." That's the whole thing.
When Maria Delgado opened Driftwood Kitchen & Bar, the goal was simple: a place where neighbors become regulars and regulars become family. 6 years later, that has not changed.
We source from local farms when we can, cook everything from scratch, and genuinely care whether you had a great meal. That is not a marketing line — it is how this place has always worked.
